Positive Vitality Apple Carrot and Goji Salad

Recipe Ingredients

Apples, raw (1medium)

Carrots, raw (2medium)

Goji berries, dried, soaked

Lemon juice, fresh

Ginger x 1 thumb

Cooking Instructions & Notes 

  1. soak goji berries in a small amount of water
  2. wash and grate apple, carrot, ginger
  3. add soaked goji berries with the soaking water (it is sweet and will improve the taste of the salad) and lemon juice
  4. combine all using hands or a fork

Sprinkle with nuts or seeds if you wish.

Use organic ingredient whenever possible. You will enhance the nutrient content of the meal and to avoid harmful pesticides.
