Bubble Chocolate and creamy Coconut Ice-creams with fresh Blueberries

Positive Vitality Bubble Chocolate and creamy Coconut Ice-creams with fresh Blueberries is

Gluten Free, Wheat Free, Dairy Free, Egg Free, Vegetarian

Ingredients:

  • Raw organic coconut oil x 250 gr
  • Raw organic cacao powder x 2/3 cup
  • Coconut milk full fat x 400 mil
  • Blueberries x 300 grams
  • Natural organic vanilla essence x 1 tsp
  • Organic date syrup or maple syrup or raw honey x 2-3 tbs (it really depends on your taste)

Preparation:

  1. Melt the coconut oil in a pot.
  2. Add cacao powder and stir thoroughly until completely dissolved.
  3. Add you favourite sweetener and vanilla essence and stir well.
  4. Let it cool slightly.
  5. Slowly poor the coconut milk to the chocolate mixture and do not stir. You don’t want the milk to combine with the chocolate because when they separate the chocolate bubbles in form in the coconut milk.
  6. Wash the blueberries and place it in a glass container or baking tin.
  7. Slowly pour the chocolate coconut mixture over the blueberries.
  8. Cover with a lid or aluminium/kitchen foil.
  9. Place in a freezer for 1-2 h until it hardens through.
  10. Before eating take it out for 30min to soften the dessert.
