Chocolate Mousse on Hazelnut Crust

Positive Vitality’s Chocolate Mousse on Hazelnut Crust is Dairy Free, Gluten Free, Raw, Vegan, Paleo

  • 200gr Hazelnuts, raw
  • 3 heaped Tbs Raw Coconut Oil,
  • 2/3 cup Dates, pitted
  • pinch of Cinnamon
  • pinch of Himalayan Salt


  • 2/3 cup Dates, pitted
  • 2 heaped Tbs Raw Coconut Oil
  • 3 heaped Tbs Raw Cacao Powder
  • 100ml Coconut Cream
  • Vanilla Extract, natural
  • pinch of Himalayan salt


  1. Soak your dates for a few hours in a filtered water.
  2. Pre heat the oven to 165C and place hazelnuts in for 45min.
  3. Crush the hazelnuts using a blender or the old fashion way, like I did, place it between 2 baking sheets and roll over it with a rolling pin, until desired consistency.
  4. Drain the dates and place in a blending container together with coconut oil, cinnamon and pinch of salt. Blend until smooth.
  5. In a bowl combine crushed hazelnuts with dates/coconut mixture using a spoon.
  6. When well combined spoon it out to a container or small baking tin and flatten it up. Place in a freezer for 15 min.

Meanwhile prepare your chocolate mousse.

  1. Drain your dates and place in a blending container.
  2. Add cacao powder, coconut oil, coconut cream, vanilla and sea salt.
  3. Blend all until very smooth consistency.

When the hazelnut crust sets…

  1. Spoon out the chocolate mouse on the top of hazelnut crust and level up with a knife.
  2. Sprinkle with designated coconut, or goji berries or cinnamon, anything you like really.
  3. Place the dessert to the fridge for 30 min to set.
  4. Store in a fridge or freeze.
