Coconut Panna Cotta with Date Mousse and Chocolate Soil

Positive Vitality’s Coconut Panna Cotta with Date Mousse and Chocolate Soil is dairy free, gluten free, egg free, free from processed sugar, Paleo

Ingredients:

Panna Cotta

  • 400ml Coconut Milk, full fat
  • 200ml Coconut Cream
  • 2,5 sheets gelatine (20gr leaves)
  • 2 heaped Tbs Coconut Blossom Sugar
  • 1 Tsp Vanilla Extract

Date Mouse

  • 1 cup Dates
  • 2/3 cup filtered Water

Chocolate Soil

  • 150gr Pecan Nuts
  • 2 heaped Tbs raw Cacao Powder
  • 2 heaped Tbs ra Coconut Oil
  • handful Dates

Preparation:

Panna Cotta

Place the gelatine sheets in a small bowl and cover with a cold water, soak for 10 min until soft.

Meanwhile, combine coconut milk with coconut cream, coconut sugar and vanilla using a mixer.

When the gelatine is soft drain it and pour 3 Tbs of boiling water over it stirring vigorously all the time.

Pour the dissolved gelatine to the coconut mixture and combine together using a mixer. Mix it for a good few minutes to make sure the gelatine is distributed evenly over the whole panna cotta.

Pour the ready panna cotta mixture to a non-stick moulds or a small glasses covered with a tin layer of coconut oil (this will allow to slide the panda cotta out of the moulds/glasses). Place in a fright for approx. 4 hours to set.

Dates Mouse

Soak the dates in a filtered water for min 4 hours until smooth. I like to soak it overnight.

Blend the dates together with a blending water until mousse consistency.

Place in the fridge and when panna cotta is set, you will top it up with the date mousse.

Chocolate Soil

Place the pecans, cacao, dates and coconut oil in a food processor and blend together until soil like consistency.

Spoon it out on a baking tin and bake at 175C for 10-15min until crunchy. Take it out and cool down.

Place it on a dessert plate, then the ready panna cotta over it and top it out with your date mouse.
