Scrambled Cauliflower with Coriander & Almond Pesto

Scrambled cauliflower

  • 1 Medium Cauliflower
  • 3 Eggs, free range
  • 50g Butter, salted
  • 2-3 Tbsp Coconut Oil, raw
  • 2-3 Tsp Chilli flakes
  • pinch Black Pepper
  • pinch Himalayan salt
  • optional: herbs & spices (I added some dried parsley and garlic)

Coriander & almond pesto

  • 150g Coriander, fresh
  • 100g blanched Almonds
  • 30g Parmigiano Reggiano
  • 100ml Olive Oil, extra virgin
  • pinch Black Pepper
  • pinch Himalayan salt
  • dash Lemon juice


Make your scrambled cauliflower first

  1. Wash and roughly chop the cauliflower, place in a food processor and blend until cauliflower rice consistency. Alternatively, you can chop it very finely.
  2. Add eggs, spices and 1/2 butter and combine all together. I used a food processor for that, but a fork will do the job as well.
  3. Melt the coconut oil and the remaining butter in a pan, then add the cauliflower mixture. Lower the heat and let it cook for 5-10 min, stirring every few minutes, until the cauliflower is soft and the eggs are done.

Meanwhile, prepare the coriander & almond pesto

  1. Wash your coriander. Place the parmesan, almonds in a blender first, then add all other ingredients.
  2. Blend all until well combined, but still crunchy.
  3. Serve with your scrambled cauliflower.
