Peri Peri Chicken Livers will convert everyone to start eating organ meats. 

Making Peri Peri Chicken Livers

Ingredients:

2 people

  • 600 grams  Fresh Chicken livers
  • 50 grams  Butter
  • 2  Onions, finely sliced
  • 1-2  Fresh Chillies
  • 2-3 tsp  Cayenne pepper
  • a pinch  Himalayan salt
  • 1-2 tsp  Black pepper
  • 100 ml  Brandy

* use organic ingredients whenever possible

Preparation:

  1. Fry the onion in butter, add spices to it. Remove onions from the pan when golden brown.
  2. Fry chicken livers in butter on a high heat for 2-3 min.
  3. Add previously fried onions and spices and fresh Chillies finally chopped. Fry another 2-3 min.
  4. Add brandy and reduce it for 2-3 min. Add salt and pepper to taste.
  5. Serve with a Green Salad with Parmesan & Carrot Shavings (recipe ballow).

Making Green Salad with Parmesan & Carrot Shavings

Ingredients:

  • 200 grams  Mixed green salad (for example: arugula, landcress, watercress)
  • 50 grams  Parmesan
  • 2  Carrots
  • 50 mil  Olive Oil, extra virgin
  • 30 mil  Balsamic Vinegar
  • 1 tsp  Black pepper
  • a pinch  Himalayan salt

* use organic ingredients whenever possible

 

Preparation:

  1. Prepare a dressing from olive oil, balsamic vinegar, salt and pepper.
  2. Wash and roughly chop the greens, place on a plater. Combine with the dressing.
  3. Wash the carrots and shave with a potato peeler or mandoline.
  4. Shave the parmesan with the potato peeler or mandoline.
  5. Decorate with carrots and parmesan shavings.
