Coconut & Almond Chia Pudding with Raw Chocolate Crunch and Dates Mousse

Positive Vitality Coconut & Almond Chia Pudding with Raw Chocolate Crunch and Dates Mousse is Gluten Free, Wheat Free, Dairy Free, Egg Free, Vegan

Ingredients:

(3-4 portions)

  • Chia seeds x 30 gram (1/3 cup)
  • Ground Almond x 40 gram (1/2 cup)
  • Dried Dates x 10
  • Dark Chocolate x 40 gram (I made my own raw dark chocolate, recipe here)
  • Coconut milk, full fat x 400 mil
  • Date syrup x 2/3 cup (which you will get from soaking the dates)

 

Preparation:

  1. Soak the dates in 2/3 cup of filtered water for 2-3 hours until soft
  2. Soak the chia seeds in the coconut milk, stir it well to make sure all seeds are soaked
  3. After soaking the dates for 2-3h the soaking water should become a date syrup
  4. Pour 1/3 of the date syrup over the ground almonds, stir and let it soak
  5. Combine chia soaked in coconut milk with the ground almonds soaked in date syrup
  6. Blend soaked dates with the remaining date syrup until it has a mousse consistency
  7. Shred the chocolate using a grater
  8. Place in a glass making a layers of chocolate then coconut & almond chia pudding then dates mousse and repeat until a full glass
  9. Chill in a fridge and enjoy!
