Creamy cashew mousse with raspberries

Positive Vitality Creamy cashew mousse with raspberries is dairy free, gluten free, egg free, sugar free, Raw, Vegan, Paleo


4-6 portions

  • 200 gr cashew nuts
  • 150 ml coconut milk, canned, full fat
  • 150 gr raspberries
  • 1/4 cup dates


  1. Soak the cashew nuts overnight (or for minimum 4h) in coconut milk
  2. Soak the dates overnight (or for minimum 4h) in filtered water, drain (you can use the soaking water as a homemade date syrup, which it becomes after soaking dates)
  3. Wash and drain the raspberries
  4. Place cashews, coconut milk and dates in a blending container and blend until smooth and creamy
  5. Clean the blender and container and blend the raspberries until mousse consistency
  6.  Spoon out the cashew mouse to small, preferably glass bowls, leaving a little bit of space on the top to fill it it with raspberry mousse
  7. Place all in a fridge for 15-30 min until firm consistency
