Sour Gherkins

Positive Vitality Sour Gherkins are gluten free, wheat free, dairy free, Paleo, Raw, Vegan, Keto. They are high in probiotics and supporting healthy digestion.


  • 3 kg Gherkins
  • 3 l filtered Water
  • 3 Heaped Tbs Rock Salt
  • 4 -6 Garlic cloves
  • 2 tsp Mustard seeds
  • bunch of Dill
  • optional: few slices of Horse Radish root or dried (this is not easy to find but you may ask in your local Polish shop for sour gherkin spices and it will be)


  1. Boil the water and let it cool down to 40C, I usually boil half of it and add other half of cold water and that’s the perfect temperature we want
  2. In a big ceramic dish or large glass jar dissolve the rock salt in prepared water and add remaining spices, garlic should be peeled and cut half
  3. Wash the gherkins and cut both ends off, place in the prepared liquid
  4. Close the dish or jar allowing some air in, you can for example use table cloth for that
  5. Leave it in a dark and cool place for 1-3 days, the fermentation process will start quite quick, so if you have a small gherkins you should be able to taste it the next day
  6. After 3 days the gherkins should be well sour and you can take them out and keep in a fridge or simply leave in the jar/dish and let it get bit more sour
